Yes, as a rule of thumb, your Cookie Policy will always need to be updated when you add a 3rd party plugin to your site.
Example: when you include a custom script to Google Tag Manager, you should update the cookie information to match the new one(s) added (see screenshots).

You might have legitimate reasons for not seeking consent for all your cookies so you need to explore that as well.
